This is a Gyuto Seki City Japanese San Mai Damascus knife. Gyuto Knife “Gyu” means cow and “to” means sword. A gyuto knife has a medium width blade for slicing, cutting, and chopping . This knife  with Kamagong handle makes one of the most desired pieces of cutlery in any chef’s collection. The over all length 14 1/2″, medium weight blade is very comparable to a western Chef’s knife. The cutting edge is 9 1/2″ 3 – 3/16″ pin holes in the handle. 3mm thick or 1/8″ thick blade.The ultimate evolution of oriental cutlery design. This beautifully finished knife features a satin polished stainless bolster already attached. This is a stainless Damascus called San Mai. 70 layers and with it’s core steel it holds the sharpest edge for utilitarian applications.
